CHOCOLATE BANANA BREAD

Yep, you read it correctly, chocolate banana bread, and it is really good!! The chocolate (cocoa and chocolate chips) lend the predominate flavor, but you can still taste the banana AND the fruit keeps the bread extremely moist.


1  1/4  cups of mashed bananas
1/3 cup vegetable oil
1 teaspoon vanilla
1 cup white sugar
2 eggs
1  1/2 cups all purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon  salt
1 cup chopped pecans
1 cup semi-sweet mini chocolate chips (a must)

Beat all of the wet ingredients and sugar together until well combined and smooth. Beat in the dry ingredients just until combined then stir in the nuts and chocolate chips.

Bake the bread in a greased 8" x 4" loaf pan, in a pre-heated 350F oven for 60 to 70 minutes or until toothpick tests clean (see note below). Cool bread in pan, on rack, for 15 minutes, then remove from pan . Immediately, wrap hot bread with plastic wrap and cool, this will seal in all of the moisture......important step.



If you click on the (above) photo, you can see the melted chocolate chips...a slice of this bread, heated in the microwave for 10 seconds or so, will satisfy any serious choco-holic.


 NOTE: Im not a big fan of baking all that batter in a single 8" x 4" loaf pan for over an hour. That always seems to produce a lot of hard crusty corners. I much prefer to make two smaller loaves which bake in about 45 minutes. Whatever pan size you use, try the toothpick test for doneness. When you remove the toothpick, you will see some melted chocolate chips on the toothpick, but no gooey batter.

NOTE: Yes, that is snow (higher than my kitchen window) in that last photo. Snow also accounts for the ultra-bright window-light in the first photo. We live at the base of a mountain pass and we get a lot of snow...but, hey, its nearly mid-March, so this is even a lot of snow for us. Tonight its zero again. I heard on the radio today that the Iditarod dog team racers are experiencing 35 below zero this week!!

Resistance is futile! It is indeed hard to resist, cake sweet smell of chocolate, particularly when it is linked to the bouquet with fond memories.

My mother is a person who is always willing to share. Not only it is generous with their advice, but they can use you share everything they know. It is always willing to explain, sewing, cooking, or advanced mathematics. But there one thing that is jealously guarded. It is their greatest secret, and one that they it swore that she will carry to the grave. And this is their chocolate cake recipe. We have tried to it by her for years, and have been so far unsuccessful.

This is not some normal chocolate mix cake- recipe. This is truly a gourmet. It is no easy chocolate cake recipe, either. Chocolate cake is usually very easy to Cook, but it requires all day and all night. It is simply there for 12 hours at a time, which create perfect chocolate cake. But it is very good. It is of inestimable value. It is the most delicious thing I have ever eaten. I could not do this chocolate cake recipe.

The thing is, in General, that is my mother everything, what in chocolate. It rarely makes chocolate of brownies. You will order not even a chocolate brownie if it starts. But this chocolate cake recipe , their favorite is thing in the world. Holiday cooking them there, and every time we ask for more. No one is ever sick of. Even my cousins, strict vegetarians, the only vegan chocolate cake recipes typically can consume, will make an exception for their delicious chocolate cake. It is really so great.

The really sad part is that, since I first of all, that chocolate cake cost, I will desert any other kind of chocolate, no food. Even the largest German chocolate cake recipe leaves me flat. Part of it is that my mother made it. It is hard to resist, because she spends so much time on it, and will clearly, that we it as much as. I dont know whether I love it quite as much, would if it someone else, that it made, but I still like it would. She won several cooking competitions has, finally with their chocolate cake recipe. It has only a few times, entered but each time, and every time when it enters the same recipe, if she won. Ive tried secretly in the kitchen, but it was no use. She simply refused to go on cooking, until I left. I hope that one day they their recipeexposed. So, I now enjoy their delicious recipe and certainly not complaining.

Burnt Caramel Sea Salt Dark Chocolate Coins with my mind on my money and my money on my mind

I wonder if Snoop Dogg visits this blog, and if he does, what he thinks about my gratuitous, trying to be cool, hip-hop reference.

This chocolate video features one of my rare forays into the world of candy. These chocolate coins are inspired by my love for the chocolate-salt-caramel flavor combination, and my fascination with edible money.

To this day, if Im in a store and I see those little mesh bags of chocolate coins, I immediately turn into a 5-year-old. Those foil wrapped chocolates were, for whatever reason, my absolute favorite. Come on, money and chocolate in one shiny package…beautiful.

It also provided a valuable life lesson. I always thought the saying should have been, "you cant have your chocolate coins and eat them too." I mean who wants to keep cake around? It gets stale. Of course you eat cake as soon as you can - thats a no-brainer. Chocolate coins presented the real have-or-eat dilemma.

Before you watch, let me say that Im not a candy maker or chocolatiere. I didn’t really use a recipe, so if you are experienced in chocolate manipulation you very well may see errors in both technique and execution.

I also didn’t bother to wrap them in gold and silver foil. I was very tempted, but time management and sanity prevailed, and I just piled them up.

The chocolate I used was made by a company called Amano, which is quickly gaining a reputation as one of the top artisan chocolate makers anywhere. They are one of the few American companies that create their chocolate directly from the cacao beans. 6 oz dark chocolate, broken in small pieces
1 tbsp sugar
1/4 cup heavy cream
