Lamb and Spinach Saag Curry Recipe

How to make Jeenas Lamb and Spinach Curry
This curry recipe is a huge hit with my family. My lamb and spinach curry recipe is nice and spicy with a tomato base and an array of aromatic spices.
I steam pressure cook the lamb then add the lamb meat to the curry gravy with a few spoonfuls of the lamb stock, it tastes wonderful.
Ingredients for Lamb and Spinach Curry Recipe
Boneless Shoulder Lamb
2 Onions (chunks)
2 Onions (sliced)
2 Inch Fresh Ginger
2 Garlic Cloves
3 Handfuls Fresh Spinach (washed)
3 tsp Tomato Puree + 1 Cup Water (mixed together)
2 Small Ladles Full Lamb Stock
For the Spices
1/2 tsp Turmeric
1/2 tsp Coriander Seeds
2 Dried Red Chillis
Pinch Dried Methi/Fenugreek
Pinch Dried Curry Leaves (crushed)
2 tsp Coriander Powder
Salt
1 tsp Cumin Powder
1 tsp Garam Masala
1 tsp Coriander Powder
1 tsp Cumin Powder
1/4 tsp Black Mustard Seeds
Pinch Fennel Seeds
Pinch Cumin Seeds
Pinch Saffron
Blend together the garlic, fresh ginger and 2 dried chillis into a paste, a tiny drop of water may be added to help loosen the paste.

Getting Started on Jeenas Lamb and Spinach Curry Recipe
Pressure cook the lamb for 15-20 minutes. Leave to rest then take any excess fat from the lamb meat and pull into chunks.
Save the stock for later.

Fry the onion chunks in a generous amount of oil. Keep stiring.
Add turmeric and coriander seeds.

Turn down the heat and add blended chilli, garlic and ginger mixture to the curry.
Stir well.

Pour in the tomato puree and water mixture.
Simmer.

Add methi, curry leaves and coriander powder.
Simmer for 5-10 minutes.
Add salt to season.

Add 1 tsp cumin powder.
Keep simmering and stir well.

You should have oil floating to the top of the pan.
Add 2 small ladle fulls of lamb stock from the pressure cooker.

Simmer.

Add spinach leaves.
Press the spinach leaves into the curry pan using a spatula.

Fry sliced onions in a little pan until golden.
Add lamb pieces to the spinach curry.
Lightly fry the mustard, cumin and fennel seeds until they crackle, add straight to the pan of spinach and lamb curry along with the fried onions.

Best served with basmati rice or thick crispy bread.

When we were young On Sunday’s at 11 in the morning either we will have aattu managai , eeral soup or this nenju elumbu soup. Now all have become calorie conscious and don’t want to go to the mutton shop itself. But the medicinal value of these soups can never be replaced by any other food.
Nenjelumbu soup does not contain much fat and those who access a mutton shop to get this can can surely give this soup a try. The soup is very good when we are suffering from cold or recovering from any illness. The soup alone can be taken in a bowl and be given to kids right from the 18 month old baby.
All at home are suffering from cold due to change of climate. So I thought of making this soup. I always prefer this to chicken soup as I feel that chicken soup if taken in large quantity leads to dry cough . For the bad cold we are having, the soup was really heavenly. After taking the soup there was a great relief. So I immediately thought of sharing the recipe with my readers

Ingredients
Nenju elumbu -200gms (If not available lamb bones can be replaced)
Small onion-10 or big onion (medium size-1 )
Small tomato -1
Rice washed water-2 cups (optional)
For grindingPepper corns-1 teaspoon
Small jeera -1 teaspoon
Dhania or dry Malli -1 ½ teaspoon
Red chili -1
Procedure
Before cooking the rice for the day, wash it and soak for 5 minutes. Drain the water and keep ready. Put the nenjelumbu, onion ,tomato and very little salt along with a teaspoon of turmeric powder in the cooker. Add the rice washed water also and cook for 10 minutes . Grind the items to be grinded in the small jar. Once the pressure goes open the cooker and add the grinded powder and allow the soup to boil for 5 minutes. There should be 4 cups of soup for this quantity ofnenjuelumbu. Dont add too much or too little water. If soup is less, water can be added and check for the correct hotness and salt. While cooking this checking is very important. If you want the soup to be little more hot, add little more milagu jeeraga powder. I hope all will have this pepper jeera powder stock at home to be used for omelet or rasam. Salt also can be added according to taste. After 5 to 6 minutes switch off the stove. Serve the soup hot. Garnish with coriander leaves while serving.

Harissa
- A dry mix inspired by a traditional Tunisian recipe with a fiery kick, softened by mint and caraway.
Aromatic Thai
- Blended to create fresh and fragrant soups and curries, this seasoning blends purple basil with ginger, coriander leaf and chilli.
Pilau
- A mix of herbs and spices to create an authentic pilau rice in a quick and simple way, combining the fragrance of cardamom and clove with the vivid colour of turmeric.
Piri Piri
- Unusually with no added salt, this Portuguese inspired chilli seasoning combines two types of chilli with paprika, lemon, peppers and other ingredients to add excitement to meat dishes.



Barts Aromatic Thai Fish Curry
4 fish fillets
2 tbsp oil
1 thumb-sized piece of ginger
2 cloves of garlic
1 red chilli
3 tsp Barts Aromatic Thai Blend
A handful of frozen green beans
1/2 a head of broccoli
1 can Coconut Milk
1 tbsp fish sauce (nam pla)

2. Grind a thumb sized piece of ginger, 2 cloves of garlic, 1 red chilli in a blender or spice grinder with a tbsp of oil.
3. Heat a pan and add the ginger, garlic and chilli paste with 2 tsp of Aromatic Thai blend, cook for a few minutes then add 1 can of coconut milk, a handful of frozen green beans and half a head of broccoli cut into small florets. Cook gently for about 10 minutes.
4. Add the fish and 1 tbsp of fish sauce (nam pla), cook for about 5 minutes until the fish is opaque. Just before serving, add the chopped coriander.
5. Serve with rice.

I have yet to use the Pilau Blend or the Harissa Blend, but I am sure they will be just a flavoursome as the other blends which all have a really authentic spice flavour and make it really for you to explore authentic regional flavours and easily add character to everyday ingredients.
The new range is available at Ocado and independent grocers and delicatessens, at Waitrose from early November, as well as from the Bart web site, priced at £4.00 per tin.
