Oven Baked Zucchini Fritters Fırında Kabak Mücver

Mücver is, if you ask me, "the" zucchini dish. It is usually deep fried and served with yogurt, garlicy yogurt. However, in our house mücver is always baked, because it is healthier and lighter. We have oven baked zucchini fritter as a snack for afternoon tea-time or sometimes for dinner with salad on the side. We love it with plain yogurt. The recipe is my moms.











2-3 medium size zucchinis, grated (3 cups approximately)
3 eggs
1/2 cup white cheese/ feta
1/3 or 1/4 cup fresh mint, chopped or 3 tbsp dried mint flakes
1/2 bunch parsley, chopped
1/3 cup dill, chopped
2-3 green onions, chopped
2 tsp baking powder
1/4 cup oil (sunflower, canola, corn, olive oil, etc)
~1 1/2 to 2 cups of flour
1 tbsp ground pepper or less
1 tbsp crushed pepper flakes (if you like it spicy)
salt (how much salt you need depends on how salty white cheese is)


-Put all the ingredients in a bowl and mix well.
-Pour the mix in a greased oven pan.
-Bake in a preheated oven at 380F for approximately an hour. Check with a knife to see if its done.
-Its good with yogurt on the side.


optional: sprinkle 1/2 to 1 cup of grated cheese (mozzarella, cheddar, etc) on top 5 minutes before its done.

STOVE TOP TO OVEN BABY BACK RIBS

Shelby, over at The Life & Loves of Grumpys Honeybunch, posted this "recipe" recently. It is more of a cooking technique than a recipe, but never-the-less, it is fantastic and so much fun to bring the tastes of summer indoors during the winter!!! Shelby has such good recipes over there, I hope you will visit her page.

This isnt the best photograph, but the ribs QUICKLY disappeared before I realized I needed a better photo, so this will have to do for now.  Lets just say that the ribs went from the above condition, to the condition in the next picture in record time.

Start with a 2 to 3 pound section of baby back pork ribs and cut them into three sections. I buy the more meaty baby back ribs, so I think next time Ill cut them into even smaller sections.

Put the sections in a large deep pot and cover with water. Shelby said to salt and pepper the ribs, but I added a full tablespoon of salt and a ½ teaspoon of black pepper directly to the water.
Bring everything to a boil and then reduce to a "high simmer" (not a full boil) for an hour, then drain.

While the ribs are simmering, cover a baking sheet (that has a lip) with foil and spray it with vegetable spray. This will be a huge help in cleanup.

Place the boiled ribs bone side up first and cover with a thick layer of your favorite barbecue sauce. Shelby recommends Sweet Baby Rays and I totally agree.  Broil in a PREHEATED broiler, on high, for 5  minutes.

Remove from oven and flip the ribs over so the meaty side is up. Apply another thick layer of barbecue sauce and put back under the broiler for another five minutes or until the sauce is bubbly and just starting to crisp up (watch it because it will burn quickly if left under the broiler too long).

Remove and serve immediately....with LOTS of napkins!!!   Delicious, thanks Shelby.

Easy Oven Roasted Ribs

You know, sometimes there is nothing more enjoyable and, in the end, more gratifying than spending an afternoon in the yard babysitting a low and slow rack of ribs smoking over an open flame.  Then there are times during a busy week when you want to statisfy a craving for moist, succulent, sweet, sticky bone sucking goodness without all the time and work involved with cooking them on the grill.  Here is a ridiculously easy way to cook baby backs in the oven with results that are amazingly good.

Easy Oven Roasted Ribs
1 rack baby back ribs
1 bottle of BBQ Sauce (I used Sweet Baby Rays)
2 tablespoons BBQ dry rub

Preheat oven to 350 degrees.  Season ribs with dry rub on both sides.  Place on an aluminum foil lined baking sheet and slather with BBQ sauce.  Cover tightly with aluminum foil and roast in the oven for 2 hours.  Remove from oven, uncover and brush with additional BBQ sauce.  Place ribs under the broiler, turning once, until brown and crusty.
