Oven Baked Zucchini Fritters Fırında Kabak Mücver

Mücver is, if you ask me, "the" zucchini dish. It is usually deep fried and served with yogurt, garlicy yogurt. However, in our house mücver is always baked, because it is healthier and lighter. We have oven baked zucchini fritter as a snack for afternoon tea-time or sometimes for dinner with salad on the side. We love it with plain yogurt. The recipe is my moms.

2-3 medium size zucchinis, grated (3 cups approximately)
3 eggs
1/2 cup white cheese/ feta
1/3 or 1/4 cup fresh mint, chopped or 3 tbsp dried mint flakes
1/2 bunch parsley, chopped
1/3 cup dill, chopped
2-3 green onions, chopped
2 tsp baking powder
1/4 cup oil (sunflower, canola, corn, olive oil, etc)
~1 1/2 to 2 cups of flour
1 tbsp ground pepper or less
1 tbsp crushed pepper flakes (if you like it spicy)
salt (how much salt you need depends on how salty white cheese is)
-Put all the ingredients in a bowl and mix well.
-Pour the mix in a greased oven pan.
-Bake in a preheated oven at 380F for approximately an hour. Check with a knife to see if its done.
-Its good with yogurt on the side.
optional: sprinkle 1/2 to 1 cup of grated cheese (mozzarella, cheddar, etc) on top 5 minutes before its done.

Kadi Pakoda Spinach Besan Fritters in Curd Gravy

This is an authentic and famous dish from Northern part of India. Usually pakora is made with Potato( Aloo) i have replaced it with Spinach to make it more tasty and healthy.
Ingredients For Pakoda( Pakora)-
Besan flour/ Gram flour-1/2cup
Rice flour and Maida flour-2tbsp
Spinach chopped-1cup
Onion medium chopped-1
Green chilly chopped-1
Ajwain/Carom/Omam-1/2tsp
Chilly powder-1tsp
Salt to taste
Baking powder-pinch(optional)
Water required
Oil to deep fry
For Kadi( Kadhi)-
Besan flour/ Gram flour-1/4cup
Curd beaten-1cup
Dry red chili whole-2
Turmeric powder-1tsp
Chilly powder-1tsp
Asafetida-pinch
Jeera seeds-1tsp
Oil-4tbsp
Salt to taste
Method
Mix all pakora ingredients (except oil) in a bowl, mix well to make very thick mixture.Heat oil in a Kadai and drop spoon full of mixture (about 5-6 pakoras at a time). Fry till pakoras are golden brown. In a deep bowl mix well both Besan and curd to a smooth texture without lumps. Add turmeric powder, chilly powder, salt and enough water. Heat oil in a pan. Add jeera seeds and red chilly. When jeera crackles add the Besan mixture. Bring to boil and simmer for 10 mins. Keep stirring so that Besan doesnt stick to the bottom of the pan.Add the fried pakoras to the Kadi. Serve hot with Steamed Rice

Onion fritters Indian Pakoda

Ingredients:
Onions------------2 large
Basin or Gram flour---3ts
Rice/Corn flour--------1ts
chilli powder----1/2ts
Turmeric---------1/4ts
Salt----------------- to taste
Cumin seeds----few
Ajwain-------------few
Oil------------------for deep fry
Ginger garlic paste-1ts






Procedure:
1. Cut the Onions in to longitudinal thin slices.
2. Add all the Ingredients except flour
3. Now add flour and mix well with 2ts of vegetable oil.The moisture in the onions should be enough to make
the dough.
4. Now Heat oil in a pan that is enough for deep frying.
5. Dip the dough dumplings in the oil and fry them in the medium flame untill they turn golden brown.
6. The onion fritters are ready to serve.

Ingredients
Any thin pasta, long can be cut in shorter pieces. I used cut vermicelli.
Eggs
Salt and vegeta
Butter for saute
Cook until golden brown.
Enjoy!!!
