Pizza with Fire Roasted Tomato Sauce Hot Italian Sausage Kalamata Olives Red Onion Roasted Peppers and Fresh Mozzerella

I was unable to decide whether I wanted Pizza or Salmon last night for dinner when I arrived at the grocery store.  Since Monday, Wednesday and Friday are fresh fish delivery day at my local supermarket, I knew there was a good chance I would find the perfect salmon filet at the seafood counter, and, if so, thats what I would fix.  Sure enough, the perfectly portioned, ideal center cut salmon filet was displayed, as if waiting for me.  I certainly was quick to purchase it, but was unable to get pizza off my mind.  I made my way to the sausage section and glanced over the selection, searching for some bulk hot italian sausage.  I found just what I was looking for, so I purchased that too and decided to have pizza for dinner and to send the salmon to the freezer for another night this week.  

In my pantry I grabbed a can of fire roasted tomatoes for the sauce.  I started by sauteeing a minced garlic clove in olive oil and then added the can of tomatoes, a tablespoon of tomato paste, a teaspoon of sugar and a teaspoon of salt.  That cooked down for about 1/2 hour on a low simmer until the liquid evaporated and a thick sauce remained. 

Meanwhile, I browned the bulk hot italian sausage in a skillet, drained the grease and set it aside.  

I used the same pizza dough recipe that I have in the past (for the recipe please see the Veggie Pizza entry on January 31, 2010).  Rolled it out into about a 10-12 inch circle and topped it with the fire roasted tomato sauce.  Next, the crumbled hot italian sausage, thin strips of roasted red pepper, thinly sliced red onion, sliced Kalamata olives sliced of fresh mozzerella cheese and a sprinkling of hot pepper flakes and dried oregano.  I placed the pizza on a pizza stone in a 450 degree oven for about 15 minutes.  While still hot, top with freshly grated parmesan cheese!

Onion fritters Indian Pakoda

Ingredients:
Onions------------2 large
Basin or Gram flour---3ts
Rice/Corn flour--------1ts
chilli powder----1/2ts
Turmeric---------1/4ts
Salt----------------- to taste
Cumin seeds----few
Ajwain-------------few
Oil------------------for deep fry
                                                     Ginger garlic paste-1ts






Procedure:
1. Cut the Onions in to longitudinal thin slices.
2. Add all the Ingredients except flour
3. Now add flour and mix well with 2ts of vegetable oil.The moisture in the onions should be enough to make 
    the dough.
4. Now Heat oil in a pan that is enough for deep frying.
5. Dip the dough dumplings in the oil and fry them in the medium flame untill they turn golden brown.
6. The onion fritters are ready to serve.

VEGETABLE PALA0 WITH ONION TOMATO AND CURD SALAD

VEGETABLE PALA0
Serves 6  Preparation time  45 minutes

Ingredients
2 cups basmati rice or any other raw rice,
3 onions sliced finely,
1 cup ground coconut,
½ teaspoon turmeric powder,
2 teaspoons ginger garlic paste,
½ cup oil or ghee, salt to taste,
3 green chilies chopped,
2 teaspoons chillie powder,
1 teaspoon garam masala powder / all spice powder,
2 cups assorted vegetables such as carrots, beans, peas, cauliflower etc cut into medium size bits
A few cashewnuts
 
Heat oil in a suitable vessel or cooker and fry the onions till brown. Add the ginger garlic paste and green chilies and sauté for a few minutes. Add the chopped vegetables, chillie powder, turmeric powder, spice powder and salt and stir-fry for a few minutes. Add the coconut and fry till the oil separates from the mixture. Add 4 cups of water and bring to boil. Add the rice and mix well. Cook on medium heat till the rice is cooked and each grain is separate. Garnish with chopped coriander leaves.

ONION, TOMATO AND CURD SALAD   /   PALAU CHUTNEY




Ingredients
2 tablespoons roughly ground coconut paste
2 green chilies
2   medium size onions chopped finely
1 tablespoon chopped coriander leaves
½ teaspoon salt
1 teaspoon lime juice
½ teaspoon sugar
½ cup curds or yogurt

Mix all the ingredients together and serve as an accompaniment for Biryani or Palau.
