Chicken and spinach lasagna


Ingredients
  • Spinach boiled and chopped ½ kg
  • Oil ¼ cup
  • Chicken breast 4 cut into fine cubes
  • Garlic paste 1 tsp
  • Tomato paste ½ cup
  • Ketchup ½ cup
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Oregano leaves 1 tsp
  • Worcestershire sauce 1 tbsp
  • Lasagna sheets 8 boiled for 20 minutes
Ingredients for cheese sauce
  • Butter 3 tbsp
  • Flour 4 tbsp
  • Milk 1 ½ cup
  • Stock 1 ½ cup
  • Salt ½ tsp
  • White pepper ½ tsp
  • Mustard powder ½ tsp
  • Cheddar cheese ½ cup + ½ cup
Method
  • Heat oil in a pan add garlic paste and chicken cubes.Cook for 5 minutes .Add tomato paste, salt, black pepper, Worcestershire sauce, oregano leaves, ketchup and ½ cup water.Cook for 10 minutes till chicken is tender and a thick sauce left.
  • To make the white sauce melt butter in a pan add in flour, with salt, pepper and mustard, stir over low heat.Add milk and stock stirring until smooth, stir constantly until sauce is thick. Remove and add ½ cup cheddar cheese.
To assemble
  • Grease oven proof dish. Spread with folded lasagna sheets, ½ chicken mixture, 1/3 cheese sauce, layer of chopperized spinach then fold lasagna strips, remaining chicken and lastly the remaining sauce, sprinkle with oregano leaves and cheese.Bake at 190 degree C for 20 minutes till light golden.
